3-Ingredient Pumpkin Sugar Cookies

My kids love to cook, so I’m always looking for super easy, kid-friendly recipes. One recipe that I kept seeing all over the internet was a simple 2 ingredient pumpkin spice cookie made with only a can of pumpkin and a box of spice cake. Of course, I didn’t have the spice cake on hand, but I did have a bag of sugar cookie mix. I looked and looked everywhere for a recipe for pumpkin sugar cookies with no success. But I decided to try it anyways. So I gave my son and daughter the supplies (giving my son the recipe to follow), and let them make the pumpkin sugar cookie dough (which is absolutely delicious, by the way). Not only did they have a blast making cookies without mom (well, almost because of the oven), they worked cooperatively on a project without any arguing!! Plus, the cookies taste AMAZING! Seriously, it’s like eating a mini pumpkin pie. So, if you’re looking for a pumpkin recipe that that’s easy enough for kids to make, you’ve got to give this a try. Here’s all you’ll need to make these yummy pumpkin sugar cookies:

 

 

Materials: 


  • 1 can of canned pumpkin (not pumpkin pie)

  • 1 bag sugar cookie mix

  • 1 Tbsp pumpkin pie spice

  • Large bowl (for mixing ingredients together)

  • Cookie Sheet

 

Step 1: Preheat oven to 350.

 
Step 2: Combine all ingredients together until mixed thoroughly. This is best done by hand. Okay, not really, but it’s definitely more fun to mix by hand.

 
Step 3: Once the dough is mixed, drop spoonfuls onto a cookie sheet (make sure that it is greased or lined so the cookies don’t stick). Now have an adult put them in the oven for 15-18 minutes and try to patiently wait as the aroma of pumpkin pie begins to fill your house.

 
Step 4: Check the bottom of the cookies to see it they’re done (it’s hard to tell by looking at the top). If the bottoms are browned, then they’re ready. Allow them to cool.

 
Step 5: Pour a glass of milk for your helpful little chefs and enjoy the yummy, chewy, pumpkin-y sugar cookie goodness together. =)
